Quick and Extremely Dirty Notes
I looked up high cholesterol foods and the Internet spit back a bunch of photos and bacon and eggs wasn't even high on that chart, which implies to me that other things like shrimp are higher in cholesterol. But I haven't fact checked that impression or put numbers to it.
I looked up both enzymes that digest proteins and enzymes that digest fats. The initial AI (no doubt SHIT) reply from cyberspace listed protease in both columns. I'm oceans away from understanding what CYP11A1 actually does to cholesterol to transform it into estrogen so I'm probably going to regret making these notes and publishing them where other people can see them at all.
In addition to having purchased digestive enzymes based on papaya extract of some sort, I know pineapple contains enzymes: bromelain.

I think I once had a meal at a seafood restaurant that had like a salsa of fresh fruits on the side which included papaya and pineapple. I'm assuming you would need to eat these fruits RAW to get the most bang for your buck enzyme wise.
So hypothetically you could look up some high cholesterol foods, like shrimp or mackerel or chicken, and dishes where those meats are served with a salsa of fresh fruits including papaya and pineapple and check your blood levels both BEFORE and AFTER eating the meal and see if that did anything for your estrogen levels or just shot your cholesterol levels so high you're ready to have a heart attack if only from seeing the numbers.
This is almost certainly COMPLETE GARBAGE as an idea. But maybe it's a thread to pull to start the process for figuring out how people with sex hormone syndromes can self treat with diet and fuck all y'all transphobes and your medical gatekeeping bullshit.

Upon reviewing my previous posts and blah blah blah, this probably doesn't make estrogen but MAY make progesterone which is a precursor for both estrogen and testosterone AND some trans people use it as part of their HRT. There's a link on the r/estrogel wiki iirc talking about benefits of progesterone for trans women.
